FormulationandevaluationofsemisolidjellyproducedbyMusaacuminataColla(AAAGroup)peels
摘要: Objective:TostudythejellyformulationproducedbyMusaacuminataColla(AAAGroup)peelsandevaluateitsantioxidantpropertieswhicharerelatedtotheproductquality.Methods:Theformulationsofpeeljellywereestablishedundertwo-levelfullfactorialdesignswithintwoblocksandonecenterpoint.Regardingresponseoptimizer,theamountofsugarandcitricacidwasobtained;hence,thepeeljellieswereproduced.Theevaluationofantioxidantpropertieswasconductedbyusingtotalphenoliccontent(TPC)assayand1,1diphenyl-2-picrylhydrazyl(DPPH)freeradicalassay.Results:TheTPCofpeelpowdervariedfrom91.8to602.26mggallicacidequivalents/100gdryweight,and5%-7%peeljellieshadphenoliccontentrangingfrom29.38to48.31mggallicacidequivalents/100gdryweight.TheresultsofDPPHtestindicatedthatat10mg/mL,thepeelpowdershowed89%DPPHinhibition,while7%peeljellyprominentlyexhibited84%DPPHinhibition.ThecorrelationbetweenDPPHIC50valueandTPCofpeelpowderaswellaspeeljellywasquitereasonablyhighwithcorrelationcoefficientrangingfrom0.8437to0.995.Conclusions:TPCcanbeusedasanindicatorinassessingtheantioxidantactivityoffruitsandvegetables.ThepresentinvestigationrevealsthatTPCismainlyresponsibleforDPPHfreeradicalscavengingcapacity. ...
